If you feel like having Mexican food tonight try this super easy tostadas.!!!
Tostadas de tinga
refried pinto beans
2 tbs olive oil
4 cups of shredded chicken breast
2 cups chicken broth
3 medium tomatoes (diced)
1 large onion (sliced)
salt to taste
crumble queso fresco
Heat oil in a large skillet, add onion and sauté until tender, add diced tomatoes and chicken broth, season with salt. Let sauce boil then add shredded chicken and heat through.
To serve tostadas spread pinto beans first, then tinga, garnish with sour cream, queso and chipotle sauce (optional).
