If you are looking for a vegetarian taco, give this one a try they are delicious all your family will love.
Makes 5 servings
10 Taco shells
4 cups of cooked and drain lentils
2 cups of refried pinto beans
2 tbs of olive oil
1/2 cup of chopped onion
2 small garlic cloves, minced
2 tbs of cumin
1 tbs of cayenne pepper
1 cup of beef broth or vegetable broth
2 cups shredded lettuce
2 cups of chopped tomato
2 cups of shredded cheddar cheese
In a large skillet saute onion in oil then add garlic.
Add cooked lentils, refried beans, cumin, cayenne, beef broth and stir.
Bring it to boil.
Reduce heat cover, cooked for 10 min
Heat up the taco shells in the oven, add lentil mixture
and garnish of your choice and
